National Conference on Food Science and Nutrition (NCFSN2006)

The 1st National Conference on Food Science and Nutrition (NCFSN2006) was successfully organized by the Faculty of Food Science and Nutrition, Universiti Malaysia Sabah on 13–14 December 2006. This inaugural conference served as a significant platform for academics, researchers, and industry professionals to share research findings, discuss emerging trends, and strengthen collaborations in the areas of Food Science and Technology and Nutrition. The conference encompassed key thematic areas including food quality assurance and safety, food chemistry and biochemistry, food processing and engineering, as well as nutritional status, dietary habits, community nutrition and health, and food-drug interactions—reflecting the faculty’s commitment to advancing knowledge and innovation in food and nutrition sciences.

International Conference on Food Science and Nutrition 2012 (ICFSN 2012)

Theme: Traditional Resources: Scientific Approaches Towards Quality Foods
The ICFSN 2012 served as a valuable forum for international experts to share and discuss the latest research findings, research and market trends, and new insights into the scientific knowledge and practical know-how on a wide range of emerging topics in the field. This international conference was jointly organised by Universiti Malaysia Sabah, the Malaysian Institute of Food Technology (MIFT) and the International Union of Food Science and Technology (IUFoST).

International Conference on Food Science and Nutrition 2017 (ICFSN 2017)

Theme: Exploring Food for the Future: Scientific Discovery and New Trends
ICFSN 2017 brought together experts to explore innovative approaches to food and nutrition. Covering five key areas—Innovative Food Products and Processes, Food Safety and Quality, Nutrition, Food Security, and Food and Culture—the conference provided a dynamic platform for exchanging new scientific insights to address the challenges of the global food industry.

International Conference on Food Science and Nutrition 2022 (ICFSN 2022)

Theme: Future Food: Emerging Trends, Health and Diversity
Focusing on the future of food, ICFSN 2022 addressed critical topics such as innovative processing, food safety and sustainability, and cultural aspects of nutrition. Plenary speakers presented cutting-edge research highlighting health benefits, market diversity, and global trends, with the goal of fostering academic collaboration to enhance food safety and public health worldwide.

International Halal Symposium 2024
(IHS 2024)
Date: 20–22 August 2024
Theme: Advancing Halal Science & Technology: Innovations, Challenges & Opportunities
IHS 2024, held in hybrid format, explored the dynamic growth of the Halal sector across seven key sub-themes: Halal Science and Authentication, Food Innovation, Food Safety and Quality, Logistics, Policy, Consumer Trends, and Advanced Technologies. The symposium featured forward-looking discussions on AI, consumer behavior, and Halal logistics, emphasizing the need for ethical, safe, and inclusive Halal products in global markets.
